

Network Restoration It is a cooperative project developed by six Local Action Groups to support the hospitality sector, which has been severely impacted by COVID-19. It aims to promote the natural, gastronomic, and cultural resources of 260 sparsely populated municipalities in Castile and León.
Within the framework of INTUR (International Inland Tourism Fair) we were fortunate enough to learn firsthand about this comprehensive project through a showcooking demonstration by different restaurants associated with the program.
The Páramo region (León) is bordered by the Órbigo and Esla rivers. From the cave-restaurant THE POINOS We were treated to a hummus made with IGP La Bañeza-León beans, washed down with an Albarín DO León wine.
In the central mountains of León, we find 25 municipalities with a low population density. From there, TAVITO MEATS, delighted us with an exquisite cured goat meat from Vegacervera, a guaranteed brand, which we accompanied with a Prieto Picudo crianza DO León wine from the VILE LA FINCA WINERY
Between the courses of the Arlanza and Arlanzón rivers, in the center of the province of Burgos, we find the Arlanza region. From the BUEZO RESTAURANT, Javier Corral brought us his cream of boletus mushroom, roast lamb and black pudding crumb which we accompanied with Buezo Varietales RV 2005 DO Arlanza, from his own winery
In the northern part of Valladolid lies Tierra de Campos. An endless steppe landscape dotted with dovecotes, a symbol of mud-brick architecture. An expression of the terroir, LA TATA WINERY (Cuenca de Campos) and HALL SALE (Villalón de Campos) delighted us with a rice dish with scorpionfish, paired with the prieto picudo rosé ESENCIA 33 from MEORIGA WINERY
The Cerrato Palentino region preserves one of the most authentic natural and cultural landscapes on the Iberian Peninsula. Of particular note are the Visigothic basilica of San Juan de Baños and the traditional neighborhoods with their underground wine cellars (Baltanás, Torquemada, Astudiño, and Dueñas).
From the VDB Tapestry Shop (Venta de Baños) brought us a typical Palencia-style vegetable stew. Another dish we tasted from this area was oven-baked garlic soup. Delicious dry garlic soups. Both dishes were accompanied by Cornitero Tinto DO Arlanza wine. SEÑORIO DE VALDESNEROS WINERY (Torquemada)
ADESCAS is a non-profit association established in 1994 with the aim of promoting and supporting the local development of 41 municipalities in southeastern León. From this area, we were joined by the rural hotel, THE GARDEN OF THE ORCHARD with its mushroom tartlet with crispy leek from Sahagún and THE WONDERFUL (Valderas) with its cod tapa with garlic sauce. The wine that accompanied both dishes was GURDOS, a rosé made from Prieto Picudo grapes from the DO León region. GONDONZELLO WINERY.

This wonderful experience culminated in a visit to the winery. MONTEPEDROSO ESTATE of the Martínez Bujanda Family in the Valladolid municipality of Rueda.
